With the basic tab only, you can easily achieve excellent B&W conversions, or at least, excellent 'negatives' to enhance afterwards in PSE. This reduces the risk of posterization in 8 bits afterwards.
In this case, I nearly desaturated and played with the temperature and tint slider to get a kind of sepia look. I pushed vibrance, clarity and contrast to 100%.
I am convinced there is something 'in between' color and B&W, just like with drawings or other artistic media. It is a matter of artistic inspiration, but you are much more at ease in editing than with the 256 values of greyscale!
